Fresh!! Homemade!!
I have been trying all kinds of new things lately. My latest is homemade mayo. It is surprisingly easy to make!
All you need is:
2 egg yolks (as fresh as possible so your mayo lasts longer)
1/2 tsp. of salt
2 Tbsp. white wine vinegar
1 cup olive oil
I use the whisk attachment on my handmixer-- it really works better than the regular beaters and my kitchenaid is just too big for making such a small amount of something.
Whisk together the egg yolks, salt, and vinegar until very well blended and light and smooth (frothy is ok)
SLOWLY drizzle/add the olive about a tablespoon at a time, allowing ample time for each to be completely incorporated. This allows the emulsion to form into mayo.
Use and refridgerate for about 2 weeks. This makes about a cup and half of mayo.
